Karnataka style shankar poli or shankar pali recipe explained with step by step pictures and a video. This is an authentic and traditional snacks recipe from Karnataka. shankar poli or shankar pali is prepared using maida or all purpose flour, ghee and salt. Here I have explained both sweet and spicy versions. For sweet version little sugar is added and for spicy version red chili powder is added.

Shankar poli or shankar pali is popular by different names in Karnataka. Malnad side it is familiar by name shankar pole, Mangalore side it is familiar by name thukudi and some people will call it by name shankar pali. In north India it is familiar by name shakkar pare (sweet) and namak pare (salt). But they make it thick and Karnataka style shankar pali will be very thin and crispy.

This recipe is very similar to badam puri, suruli puriand badusha (saat) recipes. Only the shapes are different. The best part with this recipe is you can make it either sweet or spicy or mild sweet. Optionally you can add either sesame seeds or carom seeds.

This is a very old and very common recipe in my family. Prepared quite often and everyone likes it. This recipe makes use of maida or all purpose flour. You can replace it by wheat flour but to get good taste and texture, I would suggest using maida flour. My Mother in law prepares shankar pali with different ingredients. She uses rice flour and very less maida. I will share that recipe soon.

Shankarpoli or shankarpali recipe

Preparation time: 20 min
Cooking time: 30 min
Serves: 20

Ingredients (sweet version): (measuring cup used = 240ml)

  1. 1/2 cup maida or all purpose flour
  2. 1 tsp ghee
  3. 1/2 tsp sugar (adjust as per your taste)
  4. Salt as per your taste
  5. Oil for deep frying

Ingredients (spicy version): (measuring cup used = 240ml)

  1. 1/2 cup maida or all purpose flour
  2. 1 tsp ghee
  3. 1/2 tsp chili powder
  4. Salt as per your taste
  5. Oil for deep frying

Instructions for making shankar poli or shankar pali (sweet version):

  1. Sieve and take maida flour in a wide bowl. Add in melted ghee.flour and ghee for sweet shankar poli or shankar pali
  2. Rub and mix well. Add in salt and sugar. I have added 1/2 tsp of sugar. You can add the sugar as per your taste.milk for sweet shankar poli or shankar pali
  3. Next add in required water and knead it well. Add in water little by little and prepare a stiff dough, which is much harder than chapathi dough. Close the lid and rest it for 15 minutes. Making a hard and stiff dough is very important to get crispy shankar pali.kneading dough for sweet shankar poli or shankar pali
  4. Next take a big lemon sized ball from the dough. Roll it into a thin sheet or like a chapathi. Cut it into small diamond shapes using pizza cutter or a flat spatula. Since the dough will be very hard, it is better to roll it on the kitchen slab or counter.rolling the dough for sweet shankar poli or shankar pali
  5. Heat oil in a deep frying pan. Then deep fry the diamond shapes or sweet shankar palis under low medium flame.deep frying sweet shankar poli or shankar pali
  6. Once the bubbles are stopped, continue frying them for a minute under low flame and take them out.deep frying sweet shankar poli or shankar pali

Instructions for making shankar poli or shankar pali (spicy version):

  2. Rub and mix well. Add in salt and red chili powder.milk for spicy shankar poli or shankar pali
