Saat sweet recipe or Karnataka style badusha recipe explained with step by step pictures. This is an authentic and traditional saat or badusha sweet recipe from Karnataka. Saat or badusha is prepared using maida or all purpose flour, ghee and sugar. Saat or badusha are deep fried pattis, which are then dipped in sugar syrup. These are light and crispy from inside.

This saat sweet recipe is very popular in Mangalore region of Karnataka. This sweet is also prepared in other parts of Karnataka and is familiar by name badusha. The ingredients for saat or badusha are similar to badam puri recipe, which I have posted earlier.

Saat or badusha recipe

Preparation time: 15 min
Cooking time: 30 min
Serves: 20 no

Ingredients: (measuring cup used = 120ml)

  1. 5 cup maida or all purpose flour
  2. 1 cup ghee
  3. 2 cup sugar
  4. A pinch of cardamom powder
  5. Salt as per your taste
  6. Oil for deep frying

Instructions for making saat or badusha:

  1. Sieve and take maida flour in a wide bowl. Add in salt and ghee.flour and ghee for saat or badusha
  2. Rub and mix well.mixing flour and ghee for saat or badusha
  3. Sprinkle water little by little and prepare a soft dough having soft chapathi dough consistency.soft dough for saat or badusha
  4. Make lemon sized balls from the dough. Make it little flat like pattis and keep it ready.making balls for saat or badusha
  5. Meanwhile take 2 cup sugar, 1/2 cup water and cardamom powder in a container. Boil until you get one string consistency.sugar syrup for saat or badusha
  6. That is when you check the sugar syrup in between thumb and index fingers you shall get a string. Or drop little sugar syrup in water and you should be able to make a soft ball out of it.sugar syrup for saat or badusha
  7. Heat oil in a frying pan. Now deep fry the pattis or saat under low medium flame until golden brown or when the bubbles are stopped.deep frying saat or badusha
  8. Once they are fried, dip them in the hot sugar syrup, take them out and place them on a greased plate. Or place the deep fried saat on a plate and pour the sugar syrup on them using a spoon.dipping saat or badusha in sugar syrup
