Pudina pulao or pudina rice recipe explained with step by step pictures. This is a very tasty, nutritious and most flavorful rice recipe prepared in pressure cooker. Pudina pulao is an one pot meal, prepared using rice, pudina leaves, mixed vegetables and spices. Pudina pulao or pudina rice is very tasty and the recipe is very similar to Karnataka style "vegetable pulav".

In Karnataka most of the rice bath or pulao recipes are prepared using "sona masoori" rice. So this pudina pulav or pudina rice also prepared using the same rice. I have used tomato in this recipe. If you wish you can replace it with lemon juice and mix it at the end before serving.

Pudina pulao recipe

Preparation time: 20 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice (I use sona masuri)
  2. 1 medium sized carrot
  3. 1 small potato
  4. 5-6 beans
  5. 1/2 capsicum (optional)
  6. 1/4 cup soaked or fresh green peas
  7. 2 big onions
  8. 2 tomatoes (or 1/2 lemon)
  9. 1 Star Anise
  10. 1 Indian bay leaf
  11. 1/4 tsp turmeric powder (optional)
  12. 8-10 tsp cooking oil / Ghee
  13. 2 cups water (depends on rice quality)
  14. 2 tsp salt (or as per your taste)

Ingredients for grinding: (measuring cup used = 240ml)

  1. 1/2 cup grated coconut
  2. 2cm length ginger
  3. 5-6 cloves garlic
  4. 1 tsp coriander seeds
  5. 1/2 tsp cumin seeds
  6. 1-2 green chili
  7. 1 finger length cinnamon
  8. 8-10 cloves
  9. 1 cardamom
  10. 2 tbsp coriander leaves
  11. 1 handfull pudina leaves
  12. 1/2 cup water for grinding

Instructions for making pudina pulao:

  1. Wash and chop the vegetables and keep it ready.vegetables for pudina pulao or pudina rice
  2. Wash and chop the tomatoes and onions and keep it ready.chop onion and tomato for pudina pulao or pudina rice
  3. Take all the ingredients listed under "for grinding" and make a coarse paste using 1/2 cup of water. grinding masala for pudina pulao or pudina rice
  4. Take oil or ghee in a pressure cooker and heat it. Add in Star Anise and Indian bay leaf.tempering for pudina pulao or pudina rice
  5. Add in chopped onions and fry until soft.tempering for pudina pulao or pudina rice
  6. Add in chopped tomatoes and fry until soft. If you want to add lemon juice instead of tomatoes then add it at the end before serving.frying for pudina pulao or pudina rice
  7. Add in ground masala and tumeric powder.masala for pudina pulao or pudina rice
  8. Add in chopped vegetables and fry for few minutes under medium flame.fry vegetables for pudina pulao or pudina rice
  9. Rinse 1 cup of rice and add. Mix well and add 2 cups of water (little more or less depending on rice quality). rice for pudina pulao or pudina rice
  10. Add in salt and mix well.
  11. Close the lid and make 2 whistles.
  12. Once the pressure subsides, open the lid and mix carefully. Add in lemon juice at this stage if you want to replace tomatoes with lemon juice. Serve hot with mosaru bajji or salad. how to make pudina pulao or pudina rice
