Ghee rice is a very simple and tasty rice recipe. My son loves ghee rice. He likes to ghee rice with tomato sauce. You can prepare vegetable kurma along with this. However I like to eat ghee rice as is..without any accompaniment. I prepare one more type of ghee rice using coconut milk. I will post that also in coming days.

Ghee rice recipe

Preparation time: 10 min
Cooking time: 30 min
Serves: 2

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice (I used basmati rice)
  2. 4 tbsp ghee
  3. 1 small bay leaf
  4. 1 star anise
  5. 2 petals of mace / japatre (optional)
  6. 1 cardamom
  7. 1/2 finger length cinnamon
  8. 5 - 6 cloves
  9. 1/4 tsp black pepper corns
  10. 1 tsp finely chopped ginger
  11. 5 cashews broken
  12. 4 - 5 cloves garlic finely chopped
  13. 1 onion finely chopped
  14. 2 cups water (depends on rice quality)
  15. Salt as per your taste

Ingredients for garnishing:

  1. 5 cashews
  2. 1/4 onion slit lengthwise
  3. 2 slit green chillis

Instructions for making ghee rice:

  1. Rinse the rice, soak it in the water and keep it aside. Soaking for about 20 - 30 minutes is enough.
  2. Take ghee in a pressure cooker and heat it. Add in bay leaf, star anise, mace, cardamom, cinnamon, cloves and black pepper corns. Fry them for few seconds.ghee and spices for ghee rice
  3. Add in finely chopped ginger, finely chopped garlic and broken cashews. Fry them for few seconds.ginger garlic and cashews for ghee rice
  4. Add in finely chopped onion. Fry until onions are soft under medium flame.onion for ghee rice
  5. Add in drained rice and fry for 2 minutes.rice for ghee rice
  6. Add in water and give a quick stir.water for ghee rice
  7. Add in salt and stir it again.ghee and spices for ghee rice
  8. Close the lid make 2 whistles under medium the ghee rice
  9. As soon as the pressure subsidies, take a fork and fluff the ghee rice.fluff the ghee rice
  10. Now to prepare garnishing take 1 tsp of ghee in a frying pan and heat it. Add in the cashews and fry. Do not burn them.cashews for ghee rice garnishing
  11. Followed by add in slit green chillis, onion and fry until chilli and onion for ghee rice garnishing
  12. Now garnish the ghee rice and serve it hot with tomato sauce and pickle.serve ghee rice with tomato sauce and pickle
