Aloo fry or potato stir fry recipe

Aloo fry or potato stir fry recipe explained with step by step pictures and video. Alugadde masale palya or potato fry is a very tasty recipe and goes very well with either rice or chapathi. Alugadde fry or potato fry is prepared using potato, onion, tomato, salt and spice powders. This is a very simple and quick palya recipe.

Potato is a very tasty vegetable. Potato is very good for growing kids. Here in this recipe, I have not peeled the potatoes. Instead I have washed them well. Because potato peels are said to be good for acidity. I have used 1 tsp kitchen king masala powder, which is easily available in shops. It makes the curry very tasty. However, if you don't have it, you can replace it with 1/2 tsp garam masala powder or 1 tsp pav bhaji masala powder. You can replace it with 1 tsp rasam powder or 1 tsp coriander powder + 1/2 tsp cumin powder too!

Aloo fry or potato stir fry

Preparation time: 5 min
Cooking time: 15 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 4 medium sized potatoes
  2. 1 large onion
  3. 1 medium sized tomatoes
  4. 1/2 tsp mustard seeds
  5. 1/2 tsp cumin seeds
  6. 1 red chili
  7. 1/4 tsp turmeric powder
  8. A big pinch hing / asafoetida
  9. 5 - 6 curry leaves
  10. 1 tsp kitchen king masala or 1/2 tsp garam masala
  11. 1/2 - 1 tsp red chili powder
  12. Salt as per your taste
  13. 2 tbsp cooking oil

Instructions for making aloo fry or potato stir fry:

  1. To beginwith, chop the onion, tomatoes and potatoes. Keep all other ingredients ready.
  2. Take a frying pan and heat the oil. Add in mustard seeds and cumin seeds.mustard and cumin seeds for Aloo fry or potato stir fry
  3. When the mustard seed splutters add in broken red chili.red chili for Aloo fry or potato stir fry
  4. Followed by add in chopped or sliced onion.onion for Aloo fry or potato stir fry
  5. Also add in curry leaves, turmeric powder and asafoetida. Fry until onions are soft.curry leaves, turmeric and hing for Aloo fry or potato stir fry
  6. Add in chopped tomato. Fry until tomatoes are soft and cooked.tomato for Aloo fry or potato stir fry

  10. Close the lid and cook the potatoes under low medium flame. Stir in between and add more water if required.cooking potato for Aloo fry or potato stir fry
  11. When the potatoes are cooked and soft, add in kitchen king masala powder and red chili powder.spice powders for Aloo fry or potato stir fry
  12. Give a quick mix and switch off the stove. Serve it with either chapathi or rice.Aloo fry or potato stir fry
