Potato rice or aloo rice recipe explained with step by step pictures and a video. This potato rice is very tasty, nutritious and one pot meal recipe. Potato rice or alu ricebath is prepared using rice, potato, onion, tomato, green chili, red chili powder, ginger, garlic, garam masala and few other spices.

I wish you all very happy new year. This is the first recipe of the year 2019. This is a very simple rice recipe and a perfect lunch box recipe. I have used used red chili powder and garam masala powder. You can also use any other spice powder of your choice like pav bhaji masala or kitchen king masala.

I have used kasuri methi or dried fenugreek leaves in this recipe, which you can replace it with fresh methi leaves.

Potato rice or aloo rice recipe

Preparation time: 10 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice (I used sona masuri)
  2. 2 medium sized potatoes
  3. 3 tbsp cooking oil
  4. 1/2 tsp mustard seeds
  5. 1/2 tsp cumin seeds
  6. 1 tbsp chopped ginger+garlic (or ginger garlic paste)
  7. 2 onions
  8. 1 - 2 green chilies
  9. Few curry leaves
  10. 2 tomatoes
  11. 1/4 tsp turmeric powder (optional)
  12. Small handful of coriander leaves
  13. 2 tbsp mint leaves
  14. Small handful of methi leaves or 2 tbsp kasuri methi
  15. 1 tsp red chili powder (adjust as per your spice level)
  16. 1/2 tsp garam masala powder
  17. 2.5 cups water (depends on rice quality)
  18. 2 tsp lemon juice
  19. Salt as per your taste

Instructions for making potato rice or aloo rice:

  1. Rinse the rice and soak it for 15 minutes.
  2. Peel and chop the potatoes. Also chop the leaves, tomatoes and onions.
  3. Heat 3 tbsp oil in a pressure cooker. Add in mustard seeds and cumin seeds. Opyionally you can add dry spices of your choice.tempering for potato rice or aloo rice
  4. Wait until cumin seed splutters. Add in chopped ginger and garlic (or ginger garlic paste). Give a quick stir.onion for potato rice or aloo rice
  5. Followed by add in chopped onions, slit green chilies and curry leaves.onion for potato rice or aloo rice
  6. Fry until onions are soft. Or just fry them for 2 minutes under medium flame.fried onion for potato rice or aloo rice
  7. Add in chopped tomatoes and turmeric powder. Fry tomatoes for a while.tomatoes for potato rice or aloo rice
  8. Add in peeled and chopped potatoes.potatoes for potato rice or aloo rice
  9. Also add in chopped coriander leaves, methi leaves (or kasuri methi) and mint leaves. And give a quick mix.coriander leaves, mint leaves and methi leaves for potato rice or aloo rice
  10. Add in red chili powder and garam masala. Saute for a minute. You can add any other spice powder of your choice.masala powders for potato rice or aloo rice
  11. Add in soaked rice. Mix it well.rice for potato rice or aloo rice
  12. Add in 2.5 cups of water (little more or less depending on rice quality). water for potato rice or aloo rice
  13. Add in salt.
  14. Add in lemon juice and mix it well.
  15. Close the lid and make 2 whistles.
  16. Once the pressure subsides, open the lid and mix gently. Serve it and enjoy.cooked potato rice or aloo rice
