Aloo bonda or alugadde bonda recipe explained with step by step pictures and a video. Aloo bonda is prepared using potatoes, spices and gram flour batter. To prepare aloo bonda first mashed potato and spices are mixed to prepare the palya or masala. Then a lemon sized palya or aloo masala is dipped in spicy gram flour batter and then deep fried in the oil. The potato masala is similar to one which we prepare with masala dosa but onions are not uesd.

These alu bonda or potato bondas are also called as batata vada but the recipe is little different. This is typical Karnataka style alugadde bonda recipe. And I served these aloo bonda with hot masala tea.

Aloo bonda recipe

Preparation time: 30 min
Cooking time: 10 min
Serves: 6

Ingredients for potato masala: (measuring cup used = 240ml)

  1. 2 big potato
  2. 1 - 2 finely chopped green chili
  3. 1 tbsp finely chopped coriander leaves
  4. 1/2 tsp finely chopped ginger
  5. A big pinch of turmeric powder
  6. A big pinch of hing or asafoetida
  7. 4 - 5 finely chopped curry leaves
  8. 1/4 tsp mustard seeds
  9. 1/4 tsp cumin seeds
  10. 1 tsp oil
  11. Salt as per your taste

Ingredients for batter: (measuring cup used = 240ml)

  1. 1 cup gram flour or besan
  2. 2 tbsp rice flour
  3. 1/2 - 1 tsp red chili powder
  4. 1/4 tsp turmeric powder
  5. A small pinch of baking soda
  6. Oil for deep frying
  7. Salt as per your taste.

Instructions for making aloo bonda or potato bonda:

  1. Cook, peel and mash the potatoes.mashed potatoes for aloo or alugadde bonda
  2. Add in chopped green chili, coriander leaves, ginger and salt. Mix well.green chili and ginger for aloo or alugadde bonda
  3. Take a small skillet or frying pan and prepare tempering using oil, mustard seeds, cumin seeds, chopped curry leaves, asafoetida and turmeric powder. Now add this tempering to the mashed potatoes.tempering for aloo or alugadde bonda
  4. Mix well and make lemon sized balls. Keep them aside.spiced potato balls for aloo or alugadde bonda
  5. Now to prepare the batter take gram flour, rice flour, red chili powder, turmeric powder, salt and cooking soda in a bowl.ingredients for aloo or alugadde bonda batter
  6. Add in required water and prepare a thick batter having thick dosa batter consistency.batter for aloo or alugadde bonda
  7. Heat the oil in a frying pan. Dip the potato balls in the batter and drop them into the hot oil.potatoes coated with batter for aloo or alugadde bonda
  8. Deep fry them until nice golden color. Serve it with hot masala tea.mashed potatoes for aloo or alugadde bonda
