carrot paratha or carrot parota recipe explained with step by step pictures. In this carrot parota no masala powders are used instead fresh spices are used. This is a stuffed carrot parota. To prepare the stuffing the spices are tempered, few ingredients and grated carrot are fried. Also a little mashed potato is added for binding purpose. Finally the parotas are prepared just like any other stuffed parotas.

The methi (fenugreek leaves) paratha or menthe soppina parota is little different from this as there is no stuffing involved. Even that parota tastes great and is a smart way to consume greens. I have already explained aloo parota or paratha recipe. But some people, who are suffering from digestion problem will try to avoid potato. So this is a perfect recipe for those people and they can happily eat this parota. It is yummy and just tastes like aloo parota. So try this and enjoy!!

Carrot stuffed paratha or parota recipe

Preparation time: 10 min
Cooking time: 40 min
Serves: 8 no

Ingredients: (measuring cup used = 240ml)

  1. 2 medium sized carrot
  2. 1 medium sized potato
  3. 1.5 cup wheat flour (for 8 - 10 big chapathis)
  4. 1/2 tsp mustard seeds
  5. 1/2 tsp cumin seeds
  6. 1 tsp finely chopped ginger
  7. 1 tsp finely chopped green chilli
  8. 2 tsp chopped curry leaves
  9. 2 tbsp chopped coriander leaves
  10. A big pinch of turmeric powder
  11. A big pinch of asafoetida
  12. 2 tsp cooking oil
  13. Salt as per your taste

Instructions for making carrot stuffed paratha or parota:

  1. Wash, cook and mash the potato. Also wash and grate the carrot.
  2. Make a smooth and soft dough (chapathi dough) using wheet flour, cover it and keep it aside. dough for carrot paratha
  3. Now let us prepare stuffing for carrot paratha or parota. Switch on the stove and keep it at medium flame. Keep a wok or frying pan on the stove and put 2 tsp of oil and mustard seeds. When the mustard seed splutters, add in cumin seeds.stuffing for carrot paratha
  4. Immediately add in chopped green chilli and ginger. Fry them for few seconds.stuffing for carrot paratha
  5. Add in chopped curry leaves and coriander leaves. Fry for few seconds.stuffing for carrot paratha
  6. Add in grated carrot, asafoetida and turmeric powder. Fry for 2 minutes or until the grated carrot is soft.stuffing for carrot paratha
  7. Now add mashed potato and salt to the same frying pan and mix well.potato for carrot paratha
  8. Now let us proceed with making of paratha or parota. Apply wheat flour on your fingers, take a big lemon sized dough and bring it to a bowl shape using fingers. Place a small lemon sized stuffing masala inside.stuffing carrot paratha
  9. Carefully bring the sides together and stuff the masala inside. Make sure that the outer cover is of even thickness throughout. press it gently to flatten it.stuffing carrot paratha
  10. Dust enough wheat flour on flattened and stuffed dough and roll out carefully using a rolling pin to make a carrot paratha or parota.rolling carrot paratha
  11. Take a griddle or non stick pan and heat it. Once it becomes medium hot, place the rolled paratha over the pan.stuffing carrot paratha
  12. Cook on both sides. If you wish you can apply ghee or cooking oil while cooking. Serve it hot with curd and pickle.stuffing carrot paratha
