Aloo sagu or potato sagu recipe

Aloo sagu or potato sagu recipe explained with step by step pictures. This is a very tasty sagu or kurma or curry recipe prepared using potato, carrot, onion and tomato. This potato sagu can be served as an accompaniment with chapathi or dosa or poori. Potato or aloo sagu is very easy to prepare as there is no grinding process involved in this recipe.

I learnt this recipe from my friend. But then later I came to know that, this potato sagu or curry recipe is very similar to popular Bombay sagu recipe. My son loves this and it tastes good with chapathi. I have posted 2 more kurma or sagu recipes like mixed vegetable sagu and vegetable kurma recipes. Both goes very well with chapathi or poori.

Potato sagu recipe

Preparation time: 20 min
Cooking time: 15 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 4 tsp cooking oil
  2. 1/2 tsp mustard seeds
  3. 1/2 tsp cumin seeds
  4. 1 tsp gram dal or chana dal
  5. 1 tsp urad dal
  6. 1/4 tsp turmeric powder
  7. A big pinch of asafoetida
  8. 1cm length ginger
  9. 3 cloves garlic
  10. 4 - 5 curry leaves
  11. 1 - 2 green chili
  12. 1 big onion
  13. 1 small carrot
  14. 1 tomato
  15. 2 medium sized potato
  16. 2 tsp gram flour or besan
  17. 1 tsp coriander powder
  18. 1/2 tsp cumin powder
  19. 2 tbsp coriander leaves
  20. Salt as per your taste

Instructions for making potato sagu:

  1. Cook, peel and mash the potatoes. Chop onion and tomato. Grate the carrot. Mince ginger and garlic.
  2. Take 4 tsp of oil in a wok or frying pan and heat it. Now prepare tempering using mustard seeds, cumin seeds, urad dal and gram dal.tempering for potato sagu or aloo sagu
  3. Add in slit green chilies, curry leaves, minced ginger, minced garlic, asafoetida and turmeric powder.tempering for potato sagu or aloo sagu
  4. Add in chopped onions and fry until soft. onion for potato sagu or aloo sagu
  5. Add in chopped carrot and fry until soft. carrot for potato sagu or aloo sagu
  6. Add in chopped tomatoes and fry until soft. tomato for potato sagu or aloo sagu
  7. Add in mashed potatoes.mashed potato for potato sagu or aloo sagu
  8. Take gram flour, coriander powder, cumin powder and salt in a bowl. Add in a cup of water and give a quick mix.spice powders for potato sagu or aloo sagu
  9. Add this spice and gram flour water and give a quick mix.spices and gram flour for potato sagu or aloo sagu
  10. Bring it to boil and continue boiling for 5 minutes. Garnish with coriander leaves. Serve it with dosa or poori or chapathi.coriander leaves for potato sagu or aloo sagu
