Karnataka style sambar powder recipe explained with step by step pictures and a video. I have explained 2 types of Karnataka style sambar powder recipes here. One is Udupi or Mangalore or Malnad style sambar powder recipe and the second one is Bangalore-Mysore style sambar powder recipe. Udupi sambar powder or huli pudi prepared using gram dal, urad dal, coriander seeds, cumin seeds, red chilies, fenugreek seeds and asafoetida. Mysore sambar powder or huli pudi prepared using toor dal, urad dal, coriander seeds, cumin seeds, red chili, fenugreek seeds and asafoetida.
Sambar powder recipe remains same throughout Karavali and malnad region of Karnataka. Whereas in Bangalore-Mysore region sambar powder recipe varies slightly from family to family. All spices are roasted and powdered to get fresh and aromatic Karnataka style or Udupi style or Mysore style sambar powder. Click this link to read sambar recipe prepared using this sambar powder.
In these sambar powder recipes I have not used curry leaves and mustard seeds, which is optional and is generally used while tempering the sambar. And I have not used turmeric, which is used while cooking the vegetables. Also I have not used pepper as in my family we do not like spicy sambar, which is another optional ingredient for Mysore style sambar powder .
