Udupi style idli sambar or tiffin sambar recipe explained with step by step pictures and a video. This is Udupi or Mangalore style sambar for idli or dosa. This idli sambar or tiffin sambar is prepared using dal, mixed vegetables and sambar powder. Learn how to prepare tasty hotel style idli sambar or tiffin sambar and enjoy it with soft idlis using idli rava or masala dosa or plain dosa.

I had mentioned about different types of "Karnataka style sambar recipes for idli" in my Bangalore style idli sambar post. Likewise I have already posted Malnad style idli sambar or potato onion sambar recipe. In Udupi and Mangalore region (Karavali region) of Karnataka, this is the tiffin sambar or sambar for idli. Tiffin sambar recipe varies from region to region and hotel to hotel. This sambar recipe is from a popular hotel and my Mother-in-law got it for me. So sweet of her right? She has tasted and taken recipe from few restaurants, which she felt is tasty. And then she tried at home and finalized with this sambar recipe. I prepared it and we all liked the taste. So now you have to try and give me the feedback.

This sambar makes use of Mangalore style sambar powder. But if you do not have sambar powder at home, then I have given the ingredients for one time sambar powder. So just roast all the ingredients under medium flame and prepare home made sambar powder. And then prepare the sambar.

Udupi style idli sambar recipe

Preparation time: 10 min
Cooking time: 30 min
Serves: 4

Ingredients:

  1. 1/4 cup toor dal
  2. 1 small potato or any other soft vegetable
  3. 1 small drumstick
  4. 1 small brinjal
  5. 1 big onion
  6. 1 medium sized tomato
  7. 1/4 tsp turmeric powder
  8. Small marble sized tamarind (or as per your taste)
  9. 1/2 tsp jaggery (or as per your taste)
  10. Salt as per your taste

Ingredients for roasting: (Or 3 tsp sambar powder)

  1. 2 - 4 red chilies (medium spiced chilies)
  2. 1 tsp urad dal
  3. 1/2 tsp gram dal or chana dal
  4. 1.5 tsp coriander seeds
  5. 1/4 tsp cumin seeds
  6. 8 - 10 fenugreek seeds or methi seeds
  7. A big pinch of asafoetida
  8. 1/2 tsp cooking oil

Ingredients for tempering:

  1. 1 red chili
  2. 1/4 tsp mustard seeds
  3. 1/4 tsp fenugreek seeds or methi seeds (optional)
  4. A big pinch of asafoetida
  5. 5 - 6 curry leaves
  6. 2 tsp cooking oil

Instruction for making udupi style idli sambar:

  1. This sambar is prepared using sambar powder. So if you do not have sambar powder, then roast the ingredients listed under "for roasting" under medium flame and dry grind it. Keep it aside.
  2. Chop all the vegetables. Soak chopped brinjal in water.
  3. Take 1/4 cup toor dal in a pressure cooker and rinse. Add in turmeric powder, few drops of oil and a cup of water. Close the lid and cook the dal by making 2 whistles. Please note at this stage dal will be half cooked.toor dal for udupi style idli sambar or tiffin sambar
  4. Now to the same cooker, which has half cooked dal, add in all chopped vegetables of your choice, salt and make 1 more whistle.chopped vegetables for udupi style idli sambar or tiffin sambar
  5. So when the pressure subsidies you can see dal and vegetables are cooked. Add in jaggery and tamarind extract. Also adjust the salt level. Boil it for a minute.cooked dal and vegetables for udupi style idli sambar
  6. Add in sambar powder and required water. Optionally you can grind and add little coconut. I didn't add coconut as this is a no coconut sambar recipe.sambar powder for udupi style idli sambar
  7. Continue boiling for a minute.boiling udupi style idli sambar or tiffin sambar
  8. Add some coriander leaves and switch off the stove.coriander leaves for udupi style idli sambar or tiffin sambar
  9. Temper it with oil, red chili, mustard seeds, fenugreek seeds, asafoetida and curry leaves. Serve tasty udupi style idli sambar with hot dosa or idlies.tempering udupi style idli sambar
