Beetroot undlaka or ammini kozhukattai recipe explained with step by step pictures and a video. Beetroot undlakaor beetroot rice dumplings is nothing but steamed sweet and spicy dumplings prepared using rice flour and beetroot. For sweet version jaggery and coconut is used and for spicy version green chilli tempering with grated coconut is used. This is a very easy and tasty recipe for beetroot undlaka or ammini kozhukattai. Seke undlaka is also called by name undrallu or undilge.

This is a healthy version of plain undlaka. In my family plain undlaka is an age-old recipe and we call it by name seke undlaka. Seke translates to steam and undlaka translates to small dumplings in Kannada language. The authentic seke undlaka recipe is prepared by soaking and grinding the rice. But I prepare it using rice flour. I have two more similar sweet dumpling recipes on this website namely, kayi kadubu and eeradye or (sweet dumplings in turmeric leaves) recipes.

Beetroot undlaka is a very tasty and healthy recipe. You can get creative with this recipe and replace beetroot with any other vegetable or leaves of your choice. Tiny dumplings with different colours look yummy and it will be loved by all. So do not forget to try this recipe.

Beetroot undlaka recipe

Preparation time: 20 min
Cooking time: 20 min
Serves: 1

Ingredients: (measuring cup used = 240ml)

  1. 1/2 part of a medium sized beetroot
  2. 1/4 cup rice flour
  3. Around 1/4 cup water
  4. 1/4 tsp salt (or as per your taste)

Ingredients for sweet version:

  1. 2 tbsp powdered jaggery
  2. 2 tbsp grated coconut

Ingredients for spicy version:

  1. 1/4 tsp mustard seeds
  2. 1/2 tsp urad dal
  3. 1 green chilli
  4. Few curry leaves
  5. Small pinch turmeric
  6. Small pinch asafoetida
  7. Salt as per your taste
  8. 2 tbsp grated coconut
  9. 2 tsp cooking oil

Instructions for making beetroot undlaka:

  1. Peel, rinse and chop the beetroot. It was little less than 1/2 cup for me.boil water for beetroot undlaka or ammini kozhukattai breakfast
  2. Transfer the chopped beetroot into a mixie jar. Add in required water and grind it into a fine paste.boil water for beetroot undlaka or ammini kozhukattai breakfast
  3. Measure and take the beetroot puree (or paste) and the rice flour. Let the rice flour be half of beetroot paste.boil water for beetroot undlaka or ammini kozhukattai breakfast
  4. Take beetroot paste in a pan and add in salt as per your taste.boil water for beetroot undlaka or ammini kozhukattai breakfast
  5. Wait until it comes to rolling boil and add in rice flour.boiling water for beetroot undlaka or ammini kozhukattai breakfast
  6. Mix well and switch off the stove. You can add more riceflour if you find it very soft. The dough should be soft enough to make the balls.dough for beetroot undlaka or ammini kozhukattai breakfast
  7. Wait until the dough is warm. Grease your fingers with ghee and make small marble sized balls. And arrange them on greased idli plate.kneading dough for beetroot undlaka or ammini kozhukattai breakfast
  8. Place the idli plates in a steamer and steam cook it for 8 - 10 minutes. Just like how you cook idlis. You can serve these as it is with chutney or continue with the remaining steps.steaming seke undlaka orammini kozhukattai
  9. To prepare sweet ones, mix in jaggery with grated coconut.steamed seke undlaka orammini kozhukattai
  10. And then mix in cooked rice-beetroot dumplings. Ready to serve.coconut for beetroot undlaka or ammini kozhukattai breakfast
  11. To prepare spicy ones, prepare tempering with oil, mustard seeds, urad dal, curry leaves and green chillies.coconut and jaggery for beetroot undlaka or ammini kozhukattai breakfast
  12. Add in turmeric and asafoetida.steamed rice balls in coconut and jaggery
  13. Add in cooked balls, salt as per your taste and grated coconut.seke undlaka orammini kozhukattai in a pan
  14. Mix everything well and serve them with the sweet ones.seke undlaka orammini kozhukattai in a pan
