Beetroot rasam or beetroot saaru recipe explained using step by step pictures and a video. This is a very tasty and healthy saaru or rasam recipe. Beetroot rasam or saru is prepared using beetroot, tomato, salt, jaggery, tamarind and few other spices.

Beetroot is a vegetable with full of nutrients and many medicinal values. Beetroot is a super food and it contains potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein, antioxidants and soluble fibre. Many studies have suggested that increasing consumption of beetroot like vegetables decreases the risk of obesity, diabetes and heart disease. Beetroot rasam or saaru recipe

Preparation time: 5 min
Cooking time: 20 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 1 medium sized beetroot
  2. 1 gooseberry sized tamarind
  3. 1 gooseberry sized jaggery
  4. 1 tbsp coriander leaves
  5. Salt as per your taste.

Ingredients for grinding:

  1. 1 medium sized tomato
  2. 2 red chilies
  3. 2 tsp coriander seeds
  4. 1/2 tsp cumin seeds
  5. Big pinch fenugreek seeds
  6. pinch of mustard seeds
  7. few pepper(optional)
  8. 1 tsp oil

Ingredients for tempering: (measuring cup used = 240ml)

  1. 1 red chili
  2. pinch of mustard seeds
  3. Big pinch asafoetida
  4. 4-5 curry leaves
  5. 1 tbsp cooking oil

Instructions for making beetroot saaru or rasam:

  1. Peel and chop the beetroot. Next take beetroot in a pan or cooker, add in required water and cook until soft.chopped beetroot for beetroot rasam or beetroot saaru recipe
  2. Meanwhile heat 1 tsp oil in a frying pan. Add in red chilies, coriander seeds, cumin seeds, fenugreek seeds and mustard from "for grinding list.spices for beetroot rasam or beetroot saaru recipe
  3. Fry until mustard seeds and cumin seeds start to pop. Add in chopped tomato and continue frying for a minute.tomato for beetroot rasam or beetroot saaru recipe
  4. Fry until tomatoes are soft, switch off the stove and wait until cool. Next take fried ingredients in a mixie jar.roasted ingredients for beetroot rasam or beetroot saaru recipe
  5. Add in cooked beetroot in to the mixie jar, which has roasted spices. Grind until fine paste. Optionally you can add 1/4 cup of coconut while grinding.cooked beetroot for beetroot rasam or beetroot saaru recipe
  6. Now to the beetroot cooked water, add in salt.salt for beetroot rasam or beetroot saaru recipe
  7. Also add in tamarind extract.tamarind for beetroot rasam or beetroot saaru recipe
