Kayi kadubu or rice modak recipe explained with step by step pictures and a video. Kayi kadubu or rice modak is prepared using rice, jaggery and coconut. Kayi kadubu or rice modak is a very easy and tasty steamed sweet recipe prepared during ganesha festival.

In Karnataka it is prepared in semicircle shape and is familiar by name kayi kadubu, where kayi translates to coconut. The authentic kayi kadubu recipe invloves soaking and grinding the rice. But I prepare it using rice flour. And in some parts of Karnataka, modaka is a deep fried delicacy and is prepared using maida flour. Actually through out Karnataka varities of sweets and dishes are prepared to celebrate Ganesha chathurthi, a Hindu festival. Chakkuli, kayi kadubu, kari kadubu, modaka, panchakajjaya, varieties of laddus, usli..like this the list goes on.

I have posted a simple version of kayi kadubu with minimum ingredients. Optionally you can add a tsp of roasted poppy seeds and sesame seeds to the stuffing (hoorana). Or if you want to make the kadubu more rich then you can also add dry fruits. Also you can add a tsp of wheat flour (or maida) to avoid the kadubu breaking.

Kayi kadubu recipe

Preparation time: 20 min
Cooking time: 20 min
Serves: 12 no

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice flour
  2. 1.5 - 2 cup water (depends on rice flour quality)
  3. 1 cup grated coconut
  4. 1/2 cup powdered jaggery
  5. 2 tsp ghee
  6. 1 - 2 cardamom
  7. 1 tsp salt (or as per your taste)
  8. thick plastic sheet or banana leaf

Instructions for making kayi kadubu:

  1. Boil the water in a wide pan along with 1/2 tsp ghee and salt.boil water for kayi kadubu or rice modak
  2. When it starts boiling add in rice flour all at once. You can add a tsp of wheat flour (or maida) to avoid the kadubu breaking.rice flour for kayi kadubu or rice modak
  3. Mix well for a minute and switch off the stove. Cover and set it aside.dough for kayi kadubu or rice modak
  4. Now parallely transfer the grated coconut and cardamom seeds in to mixer grinder and dry grind it.coconut for kayi kadubu or rice modak
  5. Now transfer the ground coconut into a frying pan. Add in powdered jaggery and heat it.coconut and jaggery for kayi kadubu or rice modak
  6. Stir well for few minutes under medium flame. When it becomes a soft lump or when the excess water is dried it is done. Do not make it too dry because after cooling it will become hard. Switch off the stove. Hoorana or stuffing is ready. Keep it aside.hoorana or stuffing for kayi kadubu or rice modak
  7. By now the rice flour dough would be warm. Grease your fingers with ghee and knead it well. The dough should be soft but stiff.kneading dough for kayi kadubu or rice modak
  8. Now grease the plastic sheet or banana leaf with ghee and place a lemon sized ball.plastic sheet or banana leaf for kayi kadubu or rice modak
  9. Grease your fingers or a rolling pin and pat it or roll it into a small circle.making kayi kadubu
  10. Place 1 tbsp of hoorana or stuffing in the middle.making kayi kadubu
  11. Fold it and seal the edges. Like this finish making 5 - 6 kayi kadubu (using half portion of the dough).how to make kayi kadubu
  12. Place them on a greased plate or on a banana leaf and steam cook it for 8 - 10 minutes.making kayi kadubu
  13. When it is cooking, let us proceed with making of modaka or rice modak. Again grease the sheet, pat the dough and this time place the stuffing in the middle.making rice modak
  14. Carefully take it in the hand and bring the edges together and seal it. Like this finish making all the modaks.making rice modak
  15. By now our kayi kadubu is steam cooked. Take them out carefully.cooked kayi kadubu
  16. Arrange the modaks on a greased plate (I used idli plates) and steam cook it for 8 - 10 minutes. Enjoy your 2 in 1 kayi kadubu and rice modak with ghee.steam cooking rice modak
