Carrot rice recipe explained with step by step pictures and a video. Carrot rice is a very easy and tasty rice recipe. It can be prepared using leftover rice or fresh rice. No grinding is involved in this carrot rice recipe. This carrot rice is a perfect lunch box recipe.

This carrot recipe makes use of saarina pudi or rasam powder. You can find 2 rasam powder recipes on this website like udupi rasam powder and mysore rasam powder. I have used 1 tsp of saarina pudi or rasam powder in this recipe, which you can adjust as per your taste. Also if you don't have rasam powder, then you can add any other powder of your choice. Or you can simple add some garam masala and some chilli powder. You can also adjust the other ingredients like salt and lemon juice as per your taste.

Carrot rice recipe

Preparation time: 10 min
Cooking time: 10 min
Serves: 2

Ingredients: (measuring cup used = 240ml)

  1. 2 cups cooked rice
  2. 1/2 tsp mustard seeds
  3. 1/2 tsp cumin seeds
  4. 1 tsp urad dal
  5. 2 tbsp peanuts or shenga
  6. 2 tbsp cashews
  7. 1 - 2 green chilli finely chopped
  8. 1 tsp chopped ginger
  9. 4-5 curry leaves
  10. 1 large or 2 medium sized carrot
  11. 1/4 tsp turmeric powder
  12. 2 tbsp oil
  13. 1 tsp saarina pudi or rasam powder
  14. 1 tsp salt (or as per your taste)
  15. 2 tsp lemon juice
  16. 2 tbsp grated coconut
  17. 2 tbsp chopped coriander leaves

Instructions for making carrot rice:

  1. Grate the carrot and keep all other ingredients ready.
  2. Heat oil in a pan. Roast 2 tbsp of peanuts.roasting peanuts for carrot rice recipe
  3. Prepare tempering with mustard seeds, cumin seeds, urad dal and cashews. Give a quick mix and wait until mustard seeds start to splutter.tempering for carrot rice recipe
