Coconut rice recipe explained with step by step pictures. This is a very simple one pot meal recipe prepared using rice, coconut and chili. Coconut rice is a very tasty rice bath recipe.

Coconut rice..sounds simple right? Though the recipe is simple, coconut rice is full of coconut flavor and it tastes too good. I learnt this recipe from my hostel cook "Ranganna". We were not liking hostel food much. But breakfast items used be tasty. I still remember Ranganna Uncle's tomato bath, lemon rice, tamarind rice, upma or uppittu, idli, poori and dose. This coconut rice will be very mild in taste. Making it spicy is not recommended to enjoy mild taste along with the coconut flavor.

Coconut rice recipe

Preparation time: 10 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice (I used sona masoori)
  2. 1/2 cup fresh grated coconut
  3. 1/2 tsp mustard seeds
  4. 2 tbsp groundnut or peanut
  5. 1 tsp urad dal
  6. 1 tsp chana dal or bengal gram dal
  7. 4 - 5 cashews
  8. 1 green chili
  9. 1 red chili
  10. 1/2 tsp chopped ginger
  11. A pinch of asafoetida
  12. 1 tsp salt (or as per your taste)
  13. 1/2 tsp sugar
  14. 5 - 6 curry leaves
  15. 4 tbsp ghee or coconut oil

Instructions for making coconut rice:

  1. Cook the rice and keep it aside. Rice should be cooked well but not mushy.
  2. Now to begin with let us prepare tempering for the coconut rice. Take 4 tbsp of oil in a large frying pan and heat it under medium flame. At first add in ground nuts and fry until they start crackling.ground nut for coconut rice
  3. When the groundnuts crackles, add in mustard seeds, gram dal and urad dal. Fry until mustard seed splutters and dal turns brown.tempering for coconut rice
  4. Next add in cashews, asafoetida, chopped ginger, broken red chili and slit green chili. Give a quick mix.chili and cashew for coconut rice
  5. Add in curry leaves.curry leaves for coconut rice
  6. Add in grated coconut, salt and sugar. Mix it well and switch off the stove.grated coconut, salt and sugar for coconut rice
  7. Add in cooked rice.adding cooked rice for coconut rice
  8. Mix well using a flat spatula, serve and enjoy.mixing coconut rice
