Tamarind rice or huliyanna recipe explained with step by step pictures and a video. Learn how to prepare tasty tamarind rice. This is a Karnataka style tamarind rice prepared by simple tempering. Jaggery, tamarind, salt and spice powders are the other main ingredients. This is a simplified version of Karnataka style puliyogare recipe.

There is no roasting or griding involved in this recipe. I generally prepare this simple tamarind rice, when I am in hurry. And I would say this is a beginner friendly or bachelor friendly recipe.

Tamarind rice or huliyanna recipe

Preparation time: 5 min
Cooking time: 20 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice (I used sona masuri)
  2. 1 gooseberry sized tamarind
  3. 1 gooseberry sized jaggery
  4. Salt as per your taste
  5. 1/2 - 1 tsp red chili powder
  6. 1 tsp coriander powder
  7. 1/2 tsp cumin powder
  8. 1/4 cup grated dessicated coconut

Ingredients for tempering:

  1. 2 tbsp ground nut
  2. 1/2 tsp mustard seeds
  3. 1 tsp urad dal
  4. 1 tsp bengal gram dal or chana dal
  5. 1 red chili
  6. 8 - 10 cashews
  7. 5 - 6 curry leaves
  8. 1/4 tsp asafoetida
  9. 1/4 tsp turmeric powder
  10. 4 tbsp cooking oil

Instructions for making tamarind rice or huliyanna:

  1. Cook the rice and keep it aside. Please note the rice should not be over cooked for tamarind rice.
  2. Soak tamarind in 1/2 cup of water and extract the juice.
  3. Now in a pan prepare tempering using oil, red chili, mustard seeds, ground nut, gram dal, urad dal and cashew.tempering for tamarind rice or huliyanna
  4. Reduce the flame. Add in turmeric powder, asafoetida and curry leaves. Give a quick mix.soaked tamarind for Karnataka style puliyogare or tamarind rice
  5. Next add in tamarind juice, jaggery and salt.sesame seeds for tamarind rice or huliyanna
  6. Boil it for 5 minutes under medium flame.boiling tamarind for tamarind rice or huliyanna
  7. Next add in spice powders like red chili powder, coriander powder and cumin powder. Also add in 1/2 cup of dessicated cococnut.spices for tamarind rice or huliyanna
  8. Mix well and continue boiling for few more minutes or until thick.Gojju for tamarind rice or huliyanna
  9. Add in rice.rice for tamarind rice or huliyanna
  10. Mix well using a flat spatula. Serve and enjoy the tasty tamarind rice.mixing tamarind rice or huliyanna
