Sajje dose or pearl millet dosa

Preparation time: 14 hours
Cooking time: 30 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 1 cup sajje or pearl millet
  2. 1 cup dosa rice
  3. 1/2 cup urad dal
  4. 1 tsp fenugreek seeds
  5. Ghee or oil for cooking
  6. Salt as per your taste

Ingredients for topping: (optional)

  1. 2 big finely chopped onions
  2. 1/4 cup chopped coriander leaves
  3. 1 - 2 choppedgreen chili

Instructions for making sajje dose or pearl millet dosa:

  1. Take sajje or pearl millet, and rice in a container. I have taken equal quantity of rice and millet. You can change the ratio of rice and millet as per your choice.rice and pearl millet for sajje dose or pearl millet dosa
  2. Add in urad dal and fenugreek seeds.urad dal and fenugreek seeds for sajje dose or pearl millet dosa
  3. Rinse well and soak it for 4 - 5 hours.rinse and soak millet and dals for sajje dose or pearl millet dosa
  4. Drain the soaked millet and dals. Grind it in mixer grinder until smooth and fluffy using required water. Add water little by little while grinding.grinding millet and dals for sajje dose or pearl millet dosa
  5. Pour the ground batter into a container. Close the lid and rest it for 7 - 8 hours in a warm place for fermentation.ground urad dal batter for sajje dose or pearl millet dosa
  6. After fermentation, next day morning open the lid and you can see the batter has fermented and raised. Add in salt and mix well.salt for sajje dose or pearl millet dosa
  7. Now heat the dosa pan. Now pour a laddle full of batter and spread it.making sajje dose or pearl millet dosa
  8. Optionally you can top it with finely chopped onion, coriander leaves and green chili. Close the lid and cook dosa for few seconds.onion and coriander leaves for sajje dose or pearl millet dosa
  9. Open the lid, Drizzle little oil or ghee on top and take out the dosa. No need to flip this dosa. Serve it hot with coconut chutney or sambar.drizzle oil or ghee for sajje dose or pearl millet dosa
