Kaju katli or cashew burfi recipe explained with step by step pictures and a video. Godambi burfi or cashew barfi is very easy to prepare. Kaju katli or cashew burfi is prepared using cashews, sugar, water and very little ghee. I have also used a tsp of rose water which is totally optional. And you can replace it with either cardamom powder or crushed rose petals.

Few years ago, I was under impression that preparing kaju katli or cashew burfi is very difficult. But after trying for the first time, it proved me wrong. It is one of the easiest sweet or burfi recipes. My son loves kaju katli or cashew burfi. I tried at home. And to my surprise it turned out so well. Just like the ones, which we get in popular sweet shops. My son loved it so much and I recieved many many thanks from him. I keep preparing them often.

In this recipe I have used nonstick kadai or pan. If you do not have a nonstick utensil, then add a tsp of ghee to avoid sticking.

Kaju katli recipe

Preparation time: 15 min
Cooking time: 10 min
Serves: 20 no

Ingredients: (measuring cup used = 240ml)

  1. 1 cup cashews
  2. 1/2 cup sugar
  3. 1/4 cup water
  4. 1 tsp ghee
  5. 1 tsp rose water or a pinch of cardamom powder

Instructions for making cashew burfi or kaju katli:

  1. To begin with take 1 cup of cashews in a mixie jar.cashews for kaju katli or cashew burfi recipe
  2. Powder it using mixer grinder. Let the powder be like fine rava. Grind it for a short while. If you grind it for long time, it may release the oil. Optionally you can sieve it.cashew powder for kaju katli or cashew burfi recipe
  3. Next in a pan take 1/2 cup sugar and 1/4 cup water. Keep it for boiling.sugar for kaju katli or cashew burfi recipe
  4. Keep stirring until sugar has dissolved and it starts to boil with bubbles. You need not check the syrup consistency.sugar syrup for kaju katli or cashew burfi recipe

  6. Keep mixing it using a spatula continuously under medium flame. Break the lumps if there are any.making kaju katli or cashew burfi recipe
  7. At one point, it will start leaving sides and turns thick. Switch off the stove once it reaches thick paste consistency.stirring for kaju katli or cashew burfi recipe
  8. Take a tsp of ghee in a plate or butter paper or on a kitchen counter.ghee for kaju katli or cashew burfi recipe
