Instant chutney mix recipe

Preparation time: 5 minutes
Cooking time: 15 min
Serves: 1 cup

Ingredients: (measuring cup used = 240ml)

  1. 2 - 4 red chilies
  2. 1/4 cup peanuts or shenga
  3. 1/2 cup roasted gram
  4. 1/2 cup dry coconut or desiccated coconut
  5. 3 - 4 cloves of garlic
  6. few curry leaves
  7. 1 tsp coriander seeds
  8. 1 small marble sized tamarind
  9. Salt as per your taste

Ingredients for tempering:

  1. 1 tbsp oil
  2. 1 red chili
  3. 1 tsp mustard seeds
  4. 1/4 tsp asafoetida
  5. 7 - 8 curry leaves

Instructions for making instant chutney mix:

  1. To beginwith, heat a frying pan, add in red chili and peanuts (shenga or nelagadale). Roast the peanuts until light brown under medium flame.red chili and peanut for instant chutney mix or ready mix
  2. Next add in garlic and fry for a minute.garlic for instant chutney mix or ready mix
  3. Followed by add in roasted gram. And roast for 1 - 2 minutes.roasted gram for instant chutney mix or ready mix
  4. Next add in dry coconut, few curry leaves and little coriander seeds. Roast them for a while.dry coconut for instant chutney mix or ready mix
  5. Finally add in salt and little tamarind. Give a quick mix and switch off the stove.salt and tamarind for instant chutney mix or ready mix
  6. Wait until cool and grind it into a fine powder using mixer grinder.grinding instant chutney mix or ready mix
  7. Now to prepare tempering heat oil in a pan. Add in mustard, red chili, asafoetida and curry leaves.tempering for instant chutney mix or ready mix
  8. Wait until mustard seed splutters, switch off the stove and then add in ground powder. Give a quick mix.preparing instant chutney mix or ready mix
  9. Wait until cool and store it in an airtight container.instant chutney mix or ready mix
  10. Now to prepare chutney, take the required amount of chutney mix in a bowl, simply add the water and give a quick mix.chutney using instant chutney mix or ready mix
