Chutney powder or chutney pudi recipe explained with step by step pictures and a video. Chutney powder or chutney pudi is a dry chutney recipe. Chutney pudi is prepared using curry leaves, red chili, gram dal, urad dal, dry coconut, tamarind, salt and asafoetida. All the ingredients are roasted and ground into fine powder to get tasty chutney powder.

Chutney pudi or chutney powders are life savers. These powders can be used as a substitute for chutneys. You can serve these chutney powders along with dose or idli or curd rice.

I prefer home made masala powders and I have already posted udupi rasam powder, bisi bele bath powder, Mysore rasam powder, sambar powder, vangi bath powder and puliyogare powder recipes. Now let us get on to the chutney pudi or chutney powder recipe.

Chutney powder or chutney pudi recipe

Preparation time: 10 minutes
Cooking time: 30 min
Serves: 1.5 cup

Ingredients: (measuring cup used = 240ml)

  1. 10 - 20 red chilies (adjust as per your taste)
  2. 1/2 cup gram dal or chana dal
  3. 1/3 cup urad dal
  4. 2 - 4 sprigs of curry leaves
  5. 1/2 cup dry coconut or desiccated coconut
  6. 1/2 tsp asafoetida
  7. 1 gooseberry sized tamarind or 2 tsp of vate huli powder
  8. 1/2 tsp sugar (optional)
  9. 2 tsp cooking oil
  10. Salt as per your taste

Instructions for making chutney powder or chutney pudi:

  1. To begin with take a frying pan and heat it. Add in 1 tsp of cooking oil and roast the red chilies. Fry until they are puffed up. Once they are done take them out and set it aside.roasting red chili for chutney powder or chutney pudi
  2. Next to the same pan, add in gram dal or chana dal. Dry roast until slightly brown under medium flame. Once they are done take them out and set it aside.roasting gram dal for chutney powder or chutney pudi
  3. Followed by add in urad dal. Dry roast until slightly brown under medium flame. Once they are done take them out and set it aside.roasting urad dal for chutney powder or chutney pudi
  4. Next Add in curry leaves. Start roasting them under low medium flame.roasting curry leaves for chutney powder or chutney pudi
  5. Roast until curry leaves turns crispy. To that add in asafoetida and tamarind pieces. Please note, I have used vate huli powder (Monkey jack fruit powder). Roast them for a while. Once done take them out and set it aside.roasted curry leaves for chutney powder or chutney pudi
  6. Next add in dry or dessicated coconut and roast for few minutes.roasting coconut and curry leaves for chutney powder or chutney pudi
  7. Switch off the stove and add in all other previously fried ingredients. Also add in salt and suagr (as per your taste). Give a quick mix.roasted ingredients for chutney powder or chutney pudi
  8. Once the roasted ingredients are cool, transfer them into a mixie jar.dry grinding chutney powder or chutney pudi
  9. Grind until fine powder. You can make it either fine or coarse powder depending on your choice.ground chutney powder or chutney pudi
  10. Grind in two batches. Mix it well and store it in an air tight container.chutney powder or chutney pudi or chutney podi
