Padavalakai palya or snake gourd stir fry

Preparation time: 10 min
Cooking time: 20 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 1 medium sized padavalakai or snake gourd
  2. 1 tsp urad dal
  3. 1 tsp gram dal or chana dal
  4. 4 - 6 tsp cooking oil
  5. 1/2 tsp mustard seeds
  6. 1 red chili (optional)
  7. A big pinch of turmeric powder
  8. A big pinch of asafoetida
  9. 4-5 curry leaves
  10. 1 small gooseberry sized jaggery
  11. Salt as per your taste
  12. Water as required

Ingredients for grinding:

  1. 1/2 tsp cumin seeds
  2. 1 - 2 red chili
  3. 1/2 cup grated coconut

Instructions for making padavalakai palya or snake gourd stir fry:

  1. Scrape lightly, wash and chop the snake gourd into small pieces. chopped snake gourd for padavalakai palya or snake gourd stir fry
  2. Next take oil in a frying pan and heat it. Add in 1/2 tsp mustard seeds, 1 tsp urad dal and 1 tsp chana dal.tempering for padavalakai palya or snake gourd stir fry
  3. When the mustard seeds splutters and urad dal turns brown, add in broken red chili and curry leaves. Also add in turmeric powder and asafoetida.tempering for padavalakai palya or snake gourd stir fry

  8. Meantime dry grind the grated coconut, red chilies and 1/2 tsp of cumin seeds using a small mixie jar.grind coconut and red chili for padavalakai palya or snake gourd stir fry
  9. Wait until snake gourd is cooked. Add in ground coconut, red chili and cumin seeds masala.ground masala for padavalakai palya or snake gourd stir fry
  10. Give a quick mix. Switch off the stove and serve it with hot steaming rice or chapathi.padavalakai palya or snake gourd stir fry
