When I was young, my parents used to grow this sweet potato once in a year. It used to be in a very small quantity, which was just sufficient for our personal use. Harvesting sweet potato was a real joy for us. We used to watch it and enjoy, when my Father and my elder brother were digging it. Whole atmosphere was filled with exclamations like..Hey look there!..look here!..one big!..one small!..so many!..wow!..white!..Red!. I feel kids growing in the village get to learn many things and understand the values of life.

We used to enjoy cooked sweet potatoes. Either cook them in salt water or cook them in charcol. My Mother used to prepare many dishes like payasa, papad, sambar, stir fry, sasuve, etc.,

Sweet potatoes are good for health, especially for growing kids. They are rich in fibre, vitamins and minerals. So try to include sweet potatoes in your diet.

Genasina palya or sweet potato stir fry

Preparation time: 5 min
Cooking time: 20 min
Serves: 2

Ingredients: (measuring cup used = 240ml)

  1. 1/4 kg genasu or sweet potato
  2. 1 big onion
  3. 1/2 tsp chopped ginger
  4. 4 - 6 tsp cooking oil
  5. 1/2 tsp mustard seeds
  6. 1/2 tsp cumin seeds
  7. A big pinch of turmeric powder
  8. A big pinch of asafoetida
  9. 1 - 2 green chilies
  10. 4-5 curry leaves
  11. Salt as per your taste
  12. 1 tbsp finely chopped coriander leaves

Instructions for making genasina palya or sweet potato stir fry:

  1. Wash the sweet potatoes. Cook them in a pressure cooker by adding required water. cooking sweet potato for genasina palya or sweet potato stir fry

  3. Next take oil in a frying pan and heat it. Add in 1/2 tsp mustard seeds and 1/2 tsp cumin seeds.tempering for genasina palya or sweet potato stir fry
  4. When the mustard seeds splutters and in asafoetida and turmeric powderasafoetida and turmeric powder for genasina palya or sweet potato stir fry
  5. Followed by add in slit green chilies and curry leaves.green chili and curry leaves for genasina palya or sweet potato stir fry
  6. Then add in finely chopped onion and ginger.onion for genasina palya or sweet potato stir fry
  7. Saute until onions turn translucent under medium flame.frying onion for genasina palya or sweet potato stir fry
  8. Next add in cooked and chopped sweet potato. Also sprinkle the salt as per your taste. Give a quick mix.Chopped sweet potato and salt for genasina palya or sweet potato stir fry
