Thambittu unde or rice flour ladoo recipe explained with step by step pictures. This is a akki thambittu and is prepared using rice, jaggery, roasted gram, peanuts and dessicated coconut. Thambittu or rice flour ladoo is a very popular recipe from Karnataka. This type of thambittu is prepared during Shivarathri festival across Bangalore and Mysore region of Karnataka. I have posted another hasi thambittu or malnad style thambittu recipe, which is generally prepared during Shri Krishna Janmashtami.

In my family we prepare hesaru bele payasa or mung dal kheer and 2 - 3 varieties of avalakki (poha) for Shivarathri festival. You can find all these recipes under Shivarathri recipes section.

Thambittu recipe

Preparation time: 1 hour
Cooking time: 30 min
Serves: 12 no

Ingredients: (measuring cup used = 240ml)

  1. 1/2 cup dosa rice or any other raw rice
  2. 1/4 cup roasted gram or hurigadale
  3. 1/8 cup or a handful peanuts or ground nuts
  4. 1/4 cup grated coconut
  5. 1/2 cup jaggery
  6. 1/4 cup water
  7. A big pinch of cardamom

Instructions for making akki thambittu:

  1. Rinse the rice and drain the water completely. Wait until dry by spreading it on a cloth or plate.rinsed rice for thambittu or akki thambittu
  2. Roast the rice until light brown.grind rice for thambittu unde
  3. Wait until cool and dry grind it along with roasted gram.grind rice for thambittu unde
  4. Now sieve the ground flour.soak rice for thambittu unde
  5. Roast the peanuts until it starts crackling. Wait until cool and deskin it.coconut for thambittu unde
  6. Add in deskinned peanuts, dry or dessciated coconut and cardamom powder. Mix well and keep it aside.coconut for thambittu unde
  7. Now take 1/2 cup jaggery and little less than 1/4 cup of water in a thick frying pan. And bring it to boil.jaggery for thambittu unde
  8. Boil until it just reaches one string consistency. You should be very quick. Or just boil it for 4 - 5 minutes under medium flame. Switch off the stove.jaggery syrup for thambittu unde
  9. Immediately pour this jaggery syrup over flour, coconut and peanuts mixture.rice flour for thambittu unde
  10. Mix everything well. Wait until the excess heat is reduced.dough for thambittu unde
  11. Apply ghee to the hands and make small lemon sized balls. Thambittu will be little soft when they are hot. Within an hour they will become hard.dough for thambittu unde
