Hagalakayi or bitter gourd fry recipe explained with step by step pictures and video. Hagalakayi masale palya or Bitter gourd fry is a very tasty recipe and goes very well with either plain rice or curd rice. Hagalakayi fry is prepared using sliced bitter gourd, salt, gram flour and spice powders. This is a no-jaggery bitter gourd recipe.

This is a very tasty recipe using bitter gourd. I have posted few more tasty recipes using bitter gourd on this website. Bitter gourd is a wonderful vegetable having many health benefits. Bittergourd is very good for diabetic patients. It helps to maintain the sugar level. However most of the Bittergourd recipes use Jaggery, taking out the goodness of Bittergourd for the diabetic patients. But this is a no-jaggery recipe. You can find bitter gourd or hagalakayi chutney on this website, which is also a no-jaggery recipe.

Hagalakayi fry or Bitter gourd fry

Preparation time: 5 min
Cooking time: 30 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 2 tender bitter gourds
  2. 1/4 tsp turmeric powder
  3. A big pinch hing or asafoetida
  4. 1 tsp red chili powder
  5. 1 tsp coriander powder
  6. 1/2 tsp cumin powder
  7. 1/2 - 1 tsp amchur powder
  8. 1/2 tsp garam masala powder
  9. 1 tsp crushed fennel seeds
  10. 1 tbsp gram flour or kadle hittu
  11. Salt as per your taste
  12. 3 - 5 tbsp cooking oil

Instructions for making hagalakayi fry recipe:

  1. To begin with rinse and slice the bitter gourd thinly. After slicing deseed them. Optionally you can soak them in salt water to remove the excess bitterness.bitter gourd slices for hagalakayi or bitter gourd fry
  2. Take a thick bottomed frying pan and heat 2 tbsp of oil. Add in bitter gourd slices.frying bittergourd slices for hagalakayi or bitter gourd fry
  3. Start fying them under low flame until the slices are cooked and turns brown here and there. Add in oil if required.fried bitter gourd slices for hagalakayi or bitter gourd fry
  4. After frying add in salt, asafoetida, turmeric powder and red chilli powder.salt, chilli powder, turmeric and hing for hagalakayi or bitter gourd fry
  5. Followed by add in coriander powder, cumin powder, amchur powder and garam masala.spice powders for hagalakayi or bitter gourd fry
  6. Give a quick mix. Add in oil if required. After frying for a minute add in crushed fennel seeds.fennel seeds for hagalakayi or bitter gourd fry
  7. Give a quick mix. At the end add in a tbsp of gram flour (besan or kadle hittu)gram flour for hagalakayi or bitter gourd fry
  8. Continue frying for 2 more minutes. Add in oil if you find it very dry. Switch off the stove and serve it with plain rice or curd rice.hagalakayi or bitter gourd fry
