Pudina shavige or mint vermicelli recipe explained with step by step pictures and a video. Pudina shavige or mint sevai is very tasty, nutritious and most flavorfull rice recipe. Pudina shavige or mint sevai recipe is rpepared using unroasted vermicelli, mint leaves, coriander leaves, ginger, garlic, onion, green chili and few other spices.

I like this pudina or mint flavor and I keep preparing pudina pulao, pudina chutney powder and pudina chutney often...

Coming to this recipe, I tasted this mint sevai in a restauarant during my trip to Coimbatore. This was one of the items for breakfast. I liked it so much and requested them the recipe. To my surprise, they shared the recipe with me. I prepare this very often now and I am sure you all will love this.

Pudina shavige or mint vermicelli recipe

Preparation time: 10 min
Cooking time: 20 min
Serves: 2

Ingredients: (measuring cup used = 240ml)

  1. 1 cup vermicelli (unroasted)
  2. 1/2 tsp mustard seeds
  3. 2 tbsp groundnut or peanut
  4. 1 tsp urad dal
  5. 5 - 6 curry leaves
  6. 1 - 2 green chilies
  7. 1/4 tsp turmeric powder
  8. Salt as per your taste
  9. 3 tbsp oil

Ingredients for grinding:

  1. 1 tsp jeera or cumin seeds
  2. 1/2 tsp chopped ginger
  3. 1/2 tsp chopped garlic
  4. 1 medium sized onion, chopped
  5. 1 handful pudina or mint leaves
  6. 1/2 handful coriander leaves
  7. 2 tsp cooking oil

Instructions for making Pudina shavige or mint vermicelli:

  1. To begin with let us prepare masala using ingredients, which are listed under "for grinding". So for that heat 2 tsp of oil in a frying pan and roast cumin seeds.cumin seeds for pudina shavige or mint vermicelli
  2. Followed by add in chopped ginger, garlic and onion. Saute until onions are soft.ginger, garlic and onion for pudina shavige or mint vermicelli
  3. Next add in chopped pudina and coriander leaves.mint and coriander leaves for pudina shavige or mint vermicelli
  4. Saute until soft and switch off the stove.fried mint and coriander leaves for pudina shavige or mint vermicelli
  5. Once cool, grind it into a paste using mixer grinder or blender. Set it aside.masala paste for pudina shavige or mint vermicelli
  6. Next let us cook the vermicelli. For that take around 4 cups of water, 1/4 tsp of oil, 1/2 tsp of salt in a container and bring it to boil. Add in a cup of unroasted vermicelli and cook under medium flame. Do not make it very soft. Cooking for 3 - 5 minutes will do the job.cooking vermicelli for pudina shavige or mint vermicelli
  7. Once cooked, drain the water and set it aside.drained vermicelli for pudina shavige or mint vermicelli
  8. Next let us prepare tempering. And for that heat 3 tbsp of oil in a wide pan. Add in groundnuts and fry until they start crackling.peanuts for pudina shavige or mint vermicelli
  9. Next add in mustard seeds and urad dal. Fry until mustard seed splutters.mustard seeds and urad dal for pudina shavige or mint vermicelli
  10. Add in slit green chili and curry leaves. Give a quick stir.mustard seeds and urad dal for pudina shavige or mint vermicelli
  11. Followed by add in ground masala paste, turmeric powder and salt. Mix well and cook for a minute under medium flame.mustard seeds and urad dal for pudina shavige or mint vermicelli
  12. Next add in cooked vermicelli.cooked vermicelli for pudina shavige or mint vermicelli
  13. Mix gently using a flat spatula under low flame. Switch off the stove. Enjoy tasty pudina or mint shavige.mixing pudina shavige or mint vermicelli
