Ragi ambli or ambali recipe explained with step by step pictures and a video. Ragi ambli or salty porridge is prepared using finger millet flour, buttermilk, salt, onion and curry leaves. Ragi ambli or raagi buttermilk drink is a very easy, tasty and healthy recipe.

This ragi ambli or ambali is very popular across many regions of Karnataka. It helps in reducing the body heat. If you are suffering from mouth ulcer, indigestion or constipation..then I would say this is a super food. I have used salt, buttermilk, asafoetida, finely chopped onion and curry leaves in this recipe. All these ingredients are optional. You can replace all these ingredients with any other ingredients of your choice. For example you can serve it with pickle or you can add black pepper powder or ginger or green chili etc., Ragi porridge is a very healthy for kids as well.

Ragi ambli or ambali recipe

Preparation time: 5 min
Cooking time: 10 min
Serves: 2

Ingredients: (measuring cup used = 240ml)

  1. 3 tbsp ragi or finger millet flour
  2. 2 cup water
  3. 1 cup butter milk
  4. Salt as per your taste
  5. A big pinch of asafoetida
  6. 1/2 onion finely chopped
  7. 4 - 5 curry leaves
  8. Coriander leaves finely chopped (optional)

Instructions for making ragi ambli or ambali:

  1. Take ragi (finger millet) flour in a bowl.finger millet flour for ragi ambli or ambali
  2. Add in 1/2 cup of water and mix it well. Make sure there are no lumps left out.finger millet flour batter for ragi ambli or ambali
  3. Next keep remaining 1.5 cups of water for boiling.boiling water for ragi ambli or ambali
  4. When the water starts boiling add in ragi batter from step 2.batter for ragi ambli or ambali
  5. Bring it to boil and continue boiling under low flame for 5 minutes by stirring continuously.boiling ragi ambli or ambali
  6. Switch off the stove and wait until completely cool. boiling ragi ambli or ambali
  7. Next add in salt. You can skip the below steps and serve it with pickle and ghee, if you wish.salt for ragi ambli or ambali
  8. Also add in a cup of buttermilk. (you can add whisked curd if you don't have buttermilk)buttermilk for ragi ambli or ambali
  9. Mix it well. I use a hand beater to mix it well.mixing ragi ambli or ambali
  10. Next add in asafoetida and give a quick mix.asafoetida for ragi ambli or ambali
  11. Next add in finely chopped onion.onion for ragi ambli or ambali
  12. Also finely chopped curry leaves and mix it well.curry leaves for ragi ambli or ambali
  13. Serve it and enjoy. I have topped it with extra onions and coriander leaves.boiling ragi ambli or ambali

Notes:

  1. You can serve this with pickle also.
  2. Both Onion and Asafoetida are optional ingredients. But use atleast any one of them.
  3. After step 6, you can add sugar, milk and make it sweet.
  4. To make it spicy you can add either finely chopped green chili or crushed pepper
  5. Optionally you can add either cumin powder or fenugreek powder(menthe) or any other spice powder of your choice.
