Bili holige or bili obbattu recipe explained with step by step pictures and a video. Bili holige or rice flour stuffed paratha are prepared by stuffing rice flour dough in side maida dough. This bili holige or rice flour stuffed paratha is very easy to prepare and is very tasty. Here rice dough is prepared and then it is stuffed inside maida dough. Finally rolled in to a holige or paratha.

Bili holige is very popular breakfast recipe in Indian state of Karnataka. "bili" translates to white in Kannada language. And holige is a sweet dish prepared using sweet stuffing. I learnt this recipe from my dear friend Anupama. She is from Shimoga. Generally these bili holige or obbattu is served with Mango sekarane (sweet dish prepared using mangoes) or with any other curries.

Bili holige recipe

Preparation time: 20 min
Cooking time: 30 min
Serves: 8 no

Ingredients: (measuring cup used = 240ml)

  1. 1 cup maida or all purpose flour (for 8 small chapathis)
  2. 4 tbsp cooking oil
  3. Salt as per your taste

Ingredients for stuffing: (measuring cup used = 240ml)

  1. 1 cup rice flour
  2. 1.5 cups water (depends on rice flour quality)
  3. 1 tsp oil
  4. Salt as per your taste

Instructions for making bili holige:

  1. Take maida or all purpose flour and salt in a bowl.maida for bili holige or obbattu
  2. Knead it into a smooth and soft dough by adding required water. The dough should be softer than chapathi dough.soft dough for bili holige or obbattu
  3. At the end add in 2 tbsp cooking oil. Knead again, cover it and keep it aside.oil for bili holige or obbattu
  4. Now let us prepare stuffing. In a deep frying pan take water, salt and 1 tsp of oil. And keep it for boiling.water for bili holige or obbattu
  5. When it starts boiling add in rice flour and stir continuously for 1 - 2 minutes.rice flour for bili holige or obbattu
  6. Switch off the stove and cover it with lid.rice flour dough for bili holige or obbattu
  7. Once it is cool, grease hands with oil and knead the rice flour dough well.kneading rice flour dough for bili holige or obbattu
  8. Now let us proceed with making of holige. There are 2 ways. One is with oil and the other one is with flour. Now let us look in to the oil method. Apply oil to your fingers, take a small lemon sized maida dough and make it flat. Place a lemon sized stuffing or rice flour dough over it.making bili holige or obbattu
  9. Carefully bring the sides together and stuff the rice dough inside. Press it gently to flatten it.stuffed ball for bili holige or obbattu
  10. Take a small polythene sheet. Apply oil and place the stuffed dough over the sheet. Apply oil to rolling pin as well and roll the holige or paratha using rolling pin.plastic sheet for bili holige or obbattu
  11. Or if you are not comfortable with the oil method follow dusting flour method. Dust flour to your fingers, take a small lemon sized maida dough and make it flat. Place a lemon sized stuffing or rice flour dough over it.stuffing rice flour dough for bili holige or obbattu
  12. Carefully bring the sides together and stuff the rice dough inside. Press it gently to flatten it.stuffed ball for bili holige or obbattu
  13. Take a rolling board and dust it. Next place the stuffed dough over the board. Dust the flour and roll the holige or paratha using rolling pin.rolled bili holige or obbattu
  14. Take a griddle or pan and heat it. Once it becomes medium hot, place the rolled holige or paratha over the pan.cooking bili holige or obbattu
  15. When the bubbles start appearing flip it to cook th other side.cooking bili holige or obbattu
  16. Cook on both sides. If you wish you can apply ghee or cooking oil while cooking. Serve it hot with seekarane or any other curry of your choice.cooking bili holige or obbattu
