Vegetable fried rice recipe explained with step by step pictures. Vegetable fried rice is very easy to prepare and it is a kids friendly recipe. Learn how to make Indian style vegetable fried rice recipe.

I keep preparing this fried rice because my son loves it. So I am posting this recipe under kids friendly recipes. If you are looking for more kids friendly recipes, then do check my baby corn manchurian and white sauce pasta recipes.

I have not used soya sauce in this recipe because generally in Karnataka fried rice will be white in colour. If you wish you can add a tsp of soya sauce along with the vinegar. Also I have not used chili sauce to make this recipe kids friendly. If you wish to have a spicy fried rice then add in chili sauce also along with the vinegar. You can even use a chopped green chili along with the vegetables.

Fried rice recipe

Preparation time: 10 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup basmathi rice
  2. 3 cloves of garlic minced
  3. 1/2 small carrot finely chopped
  4. 2 - 3 beans finely chopped
  5. 1/4 capsicum finely chopped
  6. 2 leaves cabbage finely chopped
  7. 2 spring onion plants chopped (reserve some greens for garnishing)
  8. 1/2 tsp sugar (optional)
  9. 2 tsp vinegar or lemon juice
  10. 2 tbsp cooking oil
  11. Salt as per your taste
  12. Pepper powder (used while serving)
  13. tomato sauce (used while serving)

Instructions for making fried rice:

  1. Cook the rice and keep it aside. Please note that the cooked rice should be grainy and it should not be over cooked. I cook the rice using open pot method and I add 1/2 tsp of ghee and little salt while cooking the rice.cooked rice for fried rice
  2. Now take 4 tbsp of oil in a big frying pan and heat it. Add in minced garlic and saute it.garlic for fried rice
  3. Next add in all finely chopped vegetables and 1/2 tsp of sugar. Reserve some spring onion greens for garnishing.vegetables for fried rice
  4. Fry the vegetables until half cooked under high flame. I fry them a bit more because my son likes it that way.fried vegetables for fried rice
  5. Reduce the flame, add in cooked rice, vinegar (or lemon juice) and salt. I didn't add pepper powder, if you wish you can add 1/4 tsp of pepper powder now.rice and vinegar for fried rice
  6. Mix well under high flame for 1 or 2 minutes.making the fried rice
  7. Switch off the stove garnish with spring onion greens. Serve it hot with pepper powder and tomato sauce.spring onion garnishing for fried rice
