Coriander leaves rice or kottambari soppu rice recipe explained with step by step pictures and a video. This is a very tasty and easy rice recipe. This coriander leaves rice can be prepared as a breakfast item or as a lunch box recipe. Kottambari soppu rice is preapred using rice, onion, green chili, lemon, cashews, coriander leaves, turmeric and a tempering.

Coriander rice recipe

Preparation time: 10 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1/2 cup rice (I used sona masuri)
  2. 2 tbsp cooking oil
  3. 1/2 tsp mustard seeds
  4. 1/2 tsp cumin seeds
  5. 1 tsp urad dal
  6. 1 tsp bengal gram dal or chana dal
  7. 2 tbsp cashews (or peanuts)
  8. 1 onion finely chopped
  9. 1/4 tsp turmeric powder
  10. 1 - 2 tsp lemon juice
  11. Salt as per your taste
  12. 1/2 tsp sugar

Ingredients for grinding: (measuring cup used = 240ml)

  1. 2 - 3 green chilies
  2. 1 handful coriander leaves
  3. Small piece ginger
  4. 2 tbsp coconut

Instructions for making coriander rice recipe:

  1. To begin with cook the rice and keep it aside.
  2. Next take coriander leaves, coconut, ginger and green chillies in a mixie jar.grinding for coriander rice recipe or kottambari soppu rice

  4. Heat 2 tbsp of oil in a frying pan. Prepare tempering with mustard, cumin, gram dal, urad dal and cashews.tempering for coriander rice recipe or kottambari soppu rice
