Pongal ready mix or huggi anna mix is prepared using rice, green gram dal, coconut, green chili and few other spices.

Pongal mix recipe

Preparation time: 1 hour
Cooking time: 20 min
Serves: 2 cup

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice (I have used Sona masuri)
  2. 3/4 cup green gram dal or moong dal or hesaru bele
  3. 2 tbsp oil or ghee
  4. 1 tsp mustard seeds
  5. 1 tsp jeera or cumin seeds
  6. 1 tsp crushed pepper
  7. 2 tbsp cashews
  8. 3 - 5 green chilies
  9. 1 inch length ginger finely chopped
  10. 10 - 15 curry leaves
  11. 1/4 tsp turmeric powder
  12. 2 big pinches of asafoetida
  13. 1/4 cup grated coconut
  14. Salt as per your taste

Instructions for making pongal mix:

  1. To begin with rinse the rice, drain water completely and spread it on a plate for drying. Drying for 1 hour would be sufficient. But please note, rinsing is totally optional. rice for instant pongal mix recipe

  3. Next dry roast green gram dal or moong dal until you get nice aroma. You can also observe a slight colour change. Take it out and keep it aside.roasting dal for instant pongal mix recipe

  5. Next in the pan heat the oil or ghee. Add in mustard seeds and cumin seeds.mustard and cumin for instant pongal mix recipe
  6. Wait until musrad seeds splutter. Add in cashews and crushed pepper. Give a quick mix.cashews and pepper for instant pongal mix recipe
  7. Followed by add in chopped green chilies, finely chopped ginger and curry leaves. Fry until crisp.green chili, ginger and curry leaves for instant pongal mix recipe

  12. To prepare pongal take one measure of pongal mix and 4 measures of water in a pressure cooker. You can cook it using open pot method too.cooking instant pongal mix recipe
