As we all know, "pani" translates to water in Hindi language. Here in this recipe pani is a flavoured spicy juice served along with pani puri chat. Pani puri is a Indian street side food, served on carts and fast food joints. Pani puri is also popular by name golgappa.
Pani puri can be prepared easily at home using commonly available ingredients. I love chats but I never used to prepare chats at home. But now, since my Son loves pani puri, masala puri and dahi puri, I prepare them often at home. When we prepare something at home, we generally expect it to be simple, quick yet tasty. And that is how I ended up with this simple and tasty pani puri recipe.

Pani puri recipe
Preparation time: 30 min
Cooking time: 30 min
Serves: 4
Ingredients for puri: (measuring cup used = 240ml)
- 1 cup fine rava (chiroti rave)
- 1 tbsp maida
- 1/2 tsp salt
- 1/4 tsp cooking soda
- 1 tsp oil
- Around 1/2 cup water
- Oil to fry the puris
Ingredients for potato stuffing: (measuring cup used = 240ml)
- 2 large potatoes
- 1/4 tsp salt
- 1/2 tsp red chili powder
- 1/2 tsp chat masala
Ingredients for pani: (measuring cup used = 240ml)
- 1 handful pudina or mint leaves
- 1 handful coriander leaves
- 2 - 4 green chilies
- 1/2 tsp black salt
- 1 tsp chat masala
- tamarind juice as per taste
- Jaggery as per taste
- 1/2 tsp lemon juice or 1/4 tsp amchur powder
- 1 onion finely chopped (used while serving)
- Salt as per taste
Instructions for making pani puri:
- To beginwith lets make puri. For that take fine rava, maida, salt and cooking soda in a bowl.
- Add in a tsp of oil. Rub and mix well using hands.
- Next start kneading the dough by adding water little by little.
- Use required water and prepare soft but stiff dough. I have used around 1/2 cup of water.
- Cover it with a damp or wet cloth and rest it for 30 minutes.
- After 30 minutes knead it again until you get a soft and stiff dough. You can either sprinkle little water or add little rava to get the proper conistency. The dough should be slightly harder than chapthi dough.
- Knead it really well..atleast for 5 minutes until you get the elasticity or gluten strands in the dough.
- Next take a big lemon sized dough.
- And roll it into a thin chapathi, thinner than regular chapathi. And then take a bowl or tumber and make thin circles.
- Finish making a batch of puris.
- Heat the oil and drop the puris. Flip the puris and fry on both the sides. Once the bubbles are subsided, continue frying the puris under low flame for 10-15 more seconds. Finish frying all the puris.
- Next to prepare potato stuffing boil 2 large potatoes, peel and take them in a container. Mash them well. Optionally you can add boiled green peas.
- Add in salt, red chili powder and chat masala.
- Give a quick mix. Potato stuffing is ready. Keep it aside.
- Next to make pani, take pudina leaves, coriander leaves and green chilies in a mixie jar. Add in required water and grind it into fine paste.
- Strain it and take the juice.
- For that add in black salt, chat masala, tamarind juice and jaggery. Taste the pani and adjust all the ingredients as per your taste.
- At the end add in lemon juice (or amchur powder), required water and give a quick mix...
- Next arrange the plate with puris, pani, potato stuffing and finely chopped onion.
- Crack open the thin side of the puri, fill the potato stuffing and chopped onion. Top it with pani and enjoy.
