Suvarna gadde or yam sambar recipe explained with step by step pictures and a video. Suvarna gedde sambar is prepared using elephant yam, dal, coconut and fresh ground masala. This is a very tasty and healthy sambar recipe prepared using elephant yam or suran. In Karnataka sambar is called by different names like "Huli" or "Huli-saaru" in malnad region, "Koddel" or "Huli" in mangalore and udupi region, "saaru" or "sambar" in rest of the places.

Elephant yam or suran has numerous health benefits. It's good for constipation and lowers the cholesterol. Yam is rich in magnesium, phosphorus, calcium and potassium. It strengthens the digestion and its adequate consumption lowers the diabetes.

Suvarna gadde huli or sambar recipe

Preparation time: 15 min
Cooking time: 30 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 1/2 kg suvarna gadde or elephant yam
  2. 4 tbsp toor dal (optional)
  3. 1/4 tsp turmeric powder
  4. 2 tsp crystal salt (or as per your taste)
  5. 1 tsp jaggery (optional but recommended)
  6. One marble sized tamarind

Ingredients for masala: (measuring cup used = 240ml)

  1. 1/2 cup grated coconut
  2. 2 - 4 red chili
  3. 1.5 tsp urad dal
  4. 2 tsp coriander seeds
  5. 1/4 tsp jeera or cumin seeds
  6. 7 - 8 fenugreek seeds
  7. A pinch of asafoetida
  8. 1 tsp cooking oil

Ingredients for tempering:

  1. 1 red chili
  2. 5 - 6 curry leaves
  3. 1/4 tsp mustard seeds
  4. 1 tsp cooking oil

Instruction for making suvarna gadde huli or sambar:

  1. peel and chop the suvarna gadde or elephant yam. After chopping rinse and soak it in good water for 10 minutes.chopped yam for suvarna gadde huli or yam sambar
  2. Take toor dal in a pressure cooker and rinse. Add in turmeric powder, few drops of oil, 1/2 cup of water and cook the dal until soft. Please note, adding toor dal is optional.cooking dal for suvarna gadde huli or yam sambar
  3. Now to the same cooker add in chopped elephant yam, 1 tsp salt and jaggery. Optionally you can add some mixed vegetables.chopped yam for suvarna gadde huli or yam sambar
  4. Next add in tamarind extract and required water.tamarind for suvarna gadde huli or yam sambar
  5. Also add in a pinch of turmeric powder and cook by making 1 whistle. If the yam is fresh then it will get cooked fast. If it is not fresh...you may have to do 2 - 3 whistles.turmeric for suvarna gadde huli or yam sambar
  6. Fresh yam or suvarna gadde will get cooked very soft and looses its shape. That is the reason I have added the tamarind while cooking. However you can add jaggery and tamarind later also.cooked yam for suvarna gadde huli or yam sambar
  7. Take all the ingredients listed under "for masala" like red chili, urad dal, coriander seeds, cumin seeds, fenugreek seeds and asafoetida as per the measurement.spices for suvarna gadde huli or yam sambar
  8. Heat a frying pan and roast red chilies, urad dal, coriander seeds, cumin seeds, fenugreek seeds and asafoetida under medium flame using a tsp of oil. Fry until dal turns brown but take care not to burn any of them.fried spices for suvarna gadde huli or yam sambar
  9. Grind roasted spices and grated coconut using a mixer grinder. Use required water and grind until smooth.grinding masala for suvarna gadde huli or yam sambar
  10. Then add this ground masala into the cooker, which has cooked yam and dal. Give a quick mix. Adjust salt, sweet and sour level. please remember, that we have already added salt, jaggery and tamarind while cooking the yam.ground masala for suvarna gadde huli or yam sambar
  11. Add in required water, mix well and bring it to boil.boiling suvarna gadde huli or yam sambar
  12. Temper it with oil, red chili, mustard seeds and curry leaves. Serve tasty suvarna gadde huli or yam sambar with hot rice.tempering suvarna gadde huli or yam sambar
