Girmit recipe explained with step by step pictures and a video. Girmit is a very popular street food from north Karnataka. Girmit is a tea time snacks or street food in Hubli dharwad region of Karnataka. Learn how to make North Karnataka churumuri or mandakki recipe. This chat or snacks recipe is extremely popular in Hubli-dharwad region of Karnataka.

In this girmit recipe a curry or gojju is prepared using onion, tomato and tamarind. Then it is mixed with puffed rice and garnished to prepare tasty girmit. Actually there are two versions of girmit. One is dry or sukha girmit and the other one is this. This girmit is more popular and it will not be crispy. In north Karnataka puffed rice or mandakki is used in many recipes. Soon I will share many more recipes from North Karnataka using puffed rice. This recipe is from my friend Anupama, who currently lives in Hubli.

Actually in North Karnataka, there are so many varieties of Mandakki or churumuri recipes. The recipe varies from region to region and house to house. Girmit recipe

Preparation time: 10 min
Cooking time: 10 min
Serves: 2 plates

Ingredients: (measuring cup used = 240ml)

  1. 2 cups puffed rice or mandakki or churumuri or murmura
  2. 2 tbsp ground nut or shenga
  3. 2 green chilies
  4. 1/2 onion finely chopped
  5. 1/2 tomato finely chopped
  6. 2 tbsp roasted gram or Putani or Hurigadale
  7. 1 tbsp finely chopped coriander leaves
  8. 2 tbsp sev or mixture (optional)

Ingredients for curry: (measuring cup used = 240ml)

  1. 1/2 tsp mustard seeds
  2. 1/2 tsp jeera or cumin seeds
  3. 5 - 6 curry leaves
  4. One big pinch turmeric powder
  5. 1 - 2 green chilies
  6. 3 - 4 cloves of garlic
  7. 1 onion finely chopped
  8. 1 tomato finely chopped
  9. Small gooseberry sized tamarind
  10. 1 tsp jaggery or sugar (adjust as per your taste)
  11. 2 tbsp roasted gram or Putani or Hurigadale
  12. 2 tsp cooking oil
  13. Salt as per your taste

Instructions for making girmit:

  1. To prepare girmit puffed rice should be very crispy. If it is not crispy, then heat it in a frying pan for few minutes under low flame.
  2. Grind 1/2 cup of roasted gram or fried gram into a fine powder and keep it aside.roasted gram for girmit
  3. Dry roast groundnuts and keep it aside. You can also use store bought salted or spicy ground nuts.ground nuts for girmit
  4. Finely chop onion, tomato, garlic and green chilies required to prepare curry. Also finely chop onion, tomato and coriander leaves required for garnishing.mustard and cumin seeds for girmit
  5. Heat 2 tsp of oil in a frying pan. Make a small slit and fry 2 green chilies and keep it aside.frying green chilies for girmit
  6. Now to the same pan, add in mustard seeds and cumin seeds. When the mustard seed splutters add in turmeric powder and curry leaves.ground nut for girmit
  7. Add in chopped onion, garlic and green chili. Fry until onions are soft.onion and green chili for girmit
  8. Add in chopped tomato and fry until tomatoes are soft.tomato for girmit
  9. Add in tamarind juice and cook until tomatoes are mushy. Add in water if required to get thick gravy consistency.tamarind juice for girmit
  10. Add in 2 tbsp of fried gram flour from step 1. Also add in salt and jaggery (or sugar).salt, sugar and fried gram flour for girmit
  11. Mix well, switch off the stove and wait until cool.masala or curry for girmit
  12. Now to prepare 2 plates of girmit, take 2 cups puffed rice in a big vessel. Add in a laddle full of curry prepared.puffed rice and curry for girmit
  13. Add in chopped tomato, onion and coriander leaves.chopped tomato and onion for girmit
  14. Add in 1 - 2 tbsp of roasted gram powder and sev (or mixture).roasted gram powder and sev for girmit
  15. Give a quick mix and serve it immediately with fried green chillies.serving girmit
