Southekayi idli or cucumber idli recipe explained here with step by step pictures and a video. Southekayi idli is an instant idli since fermentation is not required. Where as the regular idli (soft idli using idli rava) requires 7 - 8 hours of fermentation. Southekayi idli prepared using grated cucumber and idli rava (rice rava). Southekayi or cucumber idli can be served as an evening snack or as a breakfast item. Grated cucumber, coconut, green chilli, coriander leaves and idli rava are mixed well and steamed like any other idlies. Whenever I prepare southekayi or cucumber idli for breakfast, I also prepare pumpkin sweet idli. And this sweet and spicy combination is a super hit in my home. You can even prepare sweet version of these cucumber idlis by following pumpkin sweet idli recipe.

This southekayi or cucumber idli is an age-old recipe and is familiar by name "southekayi kadubu". Home made rice rava is used in the authentic southekayi kadubu recipe. Also the authentic southekayi kadubu is prepared either as rice dumplings(balls) or is covered and cooked using banana leaf.
I used store bought rice rava and if you would like to prepare rice rava at home you can do so. To prepare rice rava at home, rinse the rice, drain the water and keep it overnight for drying (no need to sun dry). Next day morning using mixer grinder dry grind it for few seconds to get coarse rava.
