Beetroot chutney recipe explained with step by step pictures and a video. Beetroot chutney is very tasty and very easy to prepare. Beetroot chutney is prepared using beetroot, red chilli, kadlebele (gram dal or chana dal), urad dal, coconut and a big fat tempering.

You can serve this beetroot chutney with rice, dosa or idli. This is a very tasty way to include vegetable in your diet. Beetroot chutney and coconut oil along with hot steaming rice tastes heavenly.

Beetroot is a vegetable with full of nutrients and many medicinal values. Beetroot is a super food and it contains potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein, antioxidants and soluble fibre. Many studies have suggested that increasing consumption of beetroot like vegetables decreases the risk of obesity, diabetes and heart disease. In this beetroot chutney recipe, I have finely chopped the beetroot. However you can grate the beetroot to reduce the beetroot cooking time. You need not cook the beetroot until very soft. Just cooking it for few minutes sould be ok. Also I haven't added onion and garlic in this recipe. If you wish to add, fry them after frying the dals.

Beetroot chutney recipe

Preparation time: 10 min
Cooking time: 5 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 1 beetroot
  2. 1/4 cup grated coconut
  3. 2 - 3 red chilli
  4. 2 tsp gram dal
  5. 1 tsp urad dal
  6. A small marble sized tamarind
  7. Salt as per your taste
  8. 1 tsp cooking oil

Ingredients for tempering:

  1. 1 tbsp cooking oil
  2. 1/2 tsp mustard seeds
  3. 1 red chilli
  4. 4 curry leaves
  5. A pinch of asafoetida

Instructions for making beetroot chutney:

  1. Heat 1 tsp of oil in a frying pan. Add in red chili, gram dal and urad dal.frying dals and chilli for beetroot chutney recipe
  2. Start frying under low-medium flame. Roast until dals turn brown. Set it aside.roasted ingredients for beetroot chutney recipe
  3. Next add in peeled and finely chopped beetroot. You can grate the beetroot too. Start frying it under high flame for a minute. You can add either garlic or onion, if you like it that way.chopped beetroot for horsegram for beetroot chutney recipe
