Beetroot rice or tawa pulao is a very easy and quick rice bath recipe that can be served as a breakfast or as a light dinner or as a lunch box dish. Beetroot rice is prepared using cooked rice, beetroot, onion,tomato, ginger, garlic, pav bhaji masala, red chilli powder, salt, curry leaves, mustard, cumin, turmeric and coriander leaves.

Beetroot is full of nutrients and many medicinal values. Beetroot is a super food and it contains potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein, antioxidants and soluble fibre. Many studies have suggested that increasing consumption of beetroot like vegetables decreases the risk of obesity, diabetes and heart disease. Beetroot rice recipe

Preparation time: 10 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup raw rice (I have used sona masuri)
  2. 2 tbsp cooking oil
  3. 1 bay leaf
  4. 1/2 tsp mustard seeds
  5. 1/2 tsp cumin seeds
  6. 7 - 8 curry leaves
  7. 1 large onion finely chopped
  8. 1/4 tsp turmeric powder
  9. 2 tsp Pav bhaji masala (adjust as per taste)
  10. 1/2 tsp red chilli powder (adjust as per taste)
  11. 2 tbsp coriander leaves
  12. Salt as per your taste

Instructions for making beetroot rice recipe:

  1. To begin with cook the rice and keep it aside. Make sure the rice is cooked well but not mushy. You can use leftover rice as well.cooked rice for beetroot rice or pulao recipe
  2. Next heat oil in a frying pan. Add in add in mustard seeds, cumin seeds and bay leaf. wait until mustard seeds start to splutter.tempering for beetroot rice or pulao recipe
  3. Add in curry leaves.curry leaves for beetroot rice or pulao recipe
  4. Also add in chopped onion. Fry until onions are soft and cooked.onion for beetroot rice or pulao recipe
  5. Add finely chopped ginger and garlic. Yo can use ginger-garlic paste as well. Fry until onions turn slightly brown.ginger and garlic for beetroot rice or pulao recipe
  6. Add tomato and grated beetroot. Fry them for a minute under high flame.tomato and beetroot for beetroot rice or pulao recipe
  7. Add turmeric powder and salt. Fry until beetroot is cooked.salt and turmeric for beetroot rice or pulao recipe
  8. Add pav bhaji masala and red chilli powder. Give it a quick mix. Reduce the flame.masala powders for beetroot rice or pulao recipe
  9. Add cooked rice and mix it well. Switch off the stove.cooked rice for beetroot rice or pulao recipe
