Benne murukku or butter chakli recipe explained with step by step pictures and a video. This is a tasty and crispy benne murukku or butter murukku recipe. Benne murukku or benne chakli is prepared using rice flour, roasted gram, gram flour, butter, asafoetida and cumin seeds. This is an easy and instant butter murukku recipe.

This benne murukku or benne chakli tastes good and is very crsipy and light. The best part is, it is very easy to prepare. Just mix in the flours, prepare the dough and deep fry it. These murukkus or chaklis are instant deep fried snacks.

But however taste wise I prefer traditional rice+urad dal chaklis. You can find 2 different ways to prepare traditional rice+urad dal chaklis on my website like chakli-type1 (roasting urad dal method) and chakli-type2 (cooking urad dal method). These are a bit difficult to prepare but tastes so good.

I referred Divya's blog (tinditirtha.com) for this recipe. But I made slight changes in the measurement. Benne murukku or benne chakli turned out so well and we all enjoyed it. I have few more murukku recipes with me and I am planning to try them in coming days.

Benne murukku or butter chakli recipe

Preparation time: 15 min
Cooking time: 20 min
Serves: 10

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice flour
  2. 1/4 cup roasted gram or hurigadale or putani
  3. 1/4 cup gram flour or besan or kadlehittu
  4. A big pinch asafoetida
  5. A big pinch turmeric powder
  6. 1 tsp salt (or as per your taste)
  7. 1 lemon sized butter
  8. Oil to deep fry

Instructions for making Benne murukku or butter murukku:

  1. To prepare benne murukku, to begin with take roasted gram or fried gram in a mixie jar. And grind it into a fine powder. Please note, it should be a fine powder. You can sieve it if required.roasted gram for benne murukku or butter chakli
  2. Next take rice flour in a wide container.rice flour for benne murukku or butter chakli
  3. Add in ground roasted gram flour from step 1.roasted gram flour for benne murukku or butter chakli
  4. Also add in gram flour (kadle hittu) or besan. Give a quick mix.gram flour for benne murukku or butter chakli
  5. Next add in salt, asafoetida, cumin seeds and little turmeric powder. Give a quick mix. Optionally you can add red chili powder if you want spicy benne murukku.salt, cumin and asafoetida for benne murukku or butter chakli
  6. Next add in butter.butter for benne murukku or butter chakli
  7. Rub and mix it well.flour and spices for benne murukku or butter chakli
  8. Add in required water and prepare a soft but stiff dough.dough for benne murukku or butter chakli
  9. Now make use of the chakli mould or murukku mould, which has one single star hole.mould for benne murukku or butter chakli
  10. Heat the oil in a frying pan. When the oil is hot, press the murukkus directly into the hot oil.pressing benne murukku or butter chakli
  11. Fry under low medium flame until the bubbles are stopped. Finish making all the murukkus and enjoy.frying benne murukku or butter chakli

Notes:

  1. Grind the roasted gram into a fine powder. if required sieve it before using.
  2. The dough should be stiff. Just soft enough to press through the moulds. If you make it more soft, murukku may not turn crispy or turn dark while frying.
  3. If you want spicy mururkku, add red chili powder.
  4. Adding right amount of butter is important to prepare crispy murukku. But same time if you increase the butter, murukku may suck more oil, while frying.
  5. Oil should be hot. Later after pressing the murukku reduce the flame and deep fry under low medium flame.
  6. Do not over crowd the murukkus in the oil.
  7. Do not disturb the pressed murukkus for a while. When the bubbles reduces then only flip it. If you try to flip it immediately after pressing it may break into pieces.
  8. You can add sesame seeds or carom seeds, if you like it that way.
  9. You can sprinkle little chat masala after deep frying for a different taste.
