2 types of southekai kosambari or cucumber salad recipes are explained using step by step pictures and a video. The first soutekai kosambari or cucumber salad is using cucumber, roasted peanuts (shenga) and coocnut. The second southekayi kosambari is using cucumber, carrot, onion, tomato and spices.
These 2 kosambari or salad recipes are very tasty and are very unique in taste. The first one is mild and filling. The roasted peanuts give a nutty crunchy taste. In this I have added the green chillies while preparing the tempering as rosting green chillies makes it less acidic. Hence the first type is very soothing to the tummy.
